Preparing the ingredients
Grate the zucchini and carrot on a coarse grater. Lightly salt the zucchini, let it sit for 5 minutes, then squeeze out the excess moisture thoroughly so the patties fry up perfectly crispy.
Finely chop the onion and fresh parsley. Crush 2 cloves of garlic for the patty mixture, and set the third clove aside for the garlic sour cream dip.
Mixing and shaping the patties
In a large mixing bowl, combine the leftover cooked rice with the squeezed zucchini, grated carrot, onion, parsley, and grated Trappist cheese.
Chef's tip
If the cooked rice from the fridge is a bit dry, it will give the patties an even better texture! Feel free to enrich them with finely chopped leftover roast meat or ham.
You can also bake them in the oven: place the patties on a baking sheet lined with parchment paper, spray with a little oil, and bake in an oven preheated to 200 °C for 20-25 minutes until golden brown.
