Preparation and Assembling the Meat Roulades
In a bowl, whisk the eggs with a pinch of salt, then cook a thin omelette in a pan. Place a piece of omelette and a slice of cooked ham on the beef slices, then sprinkle with chopped parsley. Drizzle with a little olive oil, season with salt, then roll up tightly. Secure with a skewer or toothpick.
Prepare the pork neck slices similarly: place pancetta slices on them, sprinkle with grated cheese and a little breadcrumbs, then roll up and secure.
Brush the meat roulades with olive oil, roll them in breadcrumbs, then fry them in a pan with a little oil until golden brown on all sides. Also fry the sausage alongside the meats.
