A Coq au vin a francia konyha egyik legnemesebb klasszikusa. Ebben a receptben a zsenge kakashúst lassú tűzön, testes vörösborban pároljuk omlóssá, sárgarépával, gombával és húsos szalonnával gazdagítva. Preparation and Marinating
Portion the rooster and salt it. Cut the carrots, celeriac, and celery stalks into larger pieces.
In a little oil, sauté the vegetables and mushrooms until golden brown. Stir in the tomato paste, sauté briefly, then add the chopped shallots, diced bacon, bay leaf, whole peppercorns, and allspice. Add the herb bouquet as well.
Pour in the red wine vinegar and red wine, bring to a brief boil, then let it cool completely.
Chef's tip
For the best results, use a good quality dry red wine, such as Pinot Noir or Egri Bikavér.
It is advisable to tie the spices (peppercorns, allspice) in a small piece of cheesecloth and add them to the sauce, so they can be easily removed at the end.
