Preparation method
Cut the meat into bite-sized pieces; if necessary, lightly pound them, but not too thin.
Place the meat slices into a mixture of 2 liters of water and 120 grams of salt for 1 hour, then remove and dry them.
Clean, chop, and cook the potatoes as usual, then prepare them as mashed potatoes with cream and butter. Add a little truffle oil or paste.
Chef's tip
It can also be prepared with other types of meat, fish, or even chicken liver, or you can wrap zucchini or pattypan squash in bacon.
