INGREDIENTS

  • 800 grams veal, leg, top round, loin, knuckle, etc.
  • 200 grams panko breadcrumbs
  • 1 kg potatoes
  • 200 grams butter
  • 100 grams salad
  • 1 lemon
  • 0.5 dl extra virgin olive oil
  • 2 eggs
  • 100 grams flour
  • Salt
  • Pepper
  • 1 liter oil for frying
  • 1 dl cream
  • 300-400 grams mixed pickles
  • Truffle oil or paste

PREPARATION

    Cut the meat into bite-sized pieces; if necessary, lightly pound them, but not too thin.

    Place the meat slices into a mixture of 2 liters of water and 120 grams of salt for 1 hour, then remove and dry them.

    Clean, chop, and cook the potatoes as usual, then prepare them as mashed potatoes with cream and butter. Add a little truffle oil or paste.

    For the salad, prepare a dressing using olive oil, lemon juice, and a pinch of pepper.

    Serve the fried bites with the mash, fresh salad, and any pickles if desired.
Tip
It can also be prepared with other types of meat, fish, or even chicken liver, or you can wrap zucchini or pattypan squash in bacon.
