Kifli Kukták

Fűszeres, melengető indiai egytálétel serpenyőben pirított aranybarna kelbimbóval, selymes kókusztejjel és fehérjedús csicseriborsóval. Illatos basmati rizzsel és friss zöldfűszerekkel tálalva tökéletes őszi növényi fogás.

Preparation method

Preparation

1

Remove the outer damaged leaves of the Brussels sprouts, trim the stems, and cut them in half (if using frozen, let them thaw slightly). Finely chop the onion, and finely grate the garlic and ginger. Drain the chickpeas and rinse thoroughly with cold water.

2

Cook the basmati rice in twice the amount of lightly salted water for about 12-15 minutes until tender, then leave it covered to steam until serving.

Sautéing and cooking

1

Heat 1 tablespoon of coconut oil in a deep, wide pan. Place the halved Brussels sprouts cut-side down and sear over medium-high heat for 5-7 minutes without moving them, until a nice golden-brown, caramelized crust forms. Transfer the Brussels sprouts to a plate.

Chef's tip

Browning the Brussels sprouts beforehand is an essential step: caramelization removes their bitterness and imparts a pleasantly nutty, sweet flavor that pairs fantastically with the Indian coconut curry.

The curry is even more flavorful the next day as the flavors meld together. It stays fresh in an airtight container in the refrigerator for 3-4 days, making it an excellent meal prep idea for lunch.
