Preparation method

1

Sort through the dried white beans, wash them thoroughly, and soak in cold water for at least 8 hours or overnight. The next day, drain well.

2

Clean the beef shank, pat it dry, and cut into bite-sized cubes of about 2.5-3 cm. Finely dice the smoked bacon, peel and slice the carrots into rounds. Finely chop the onions and crush the garlic cloves.

3

In a heavy-bottomed pot or Dutch oven, melt the lard, add the smoked bacon, and render over medium heat until crispy cracklings form.

Chef's tip

Reheated the next day, the beef and bean stew with red wine is even richer and thicker in flavor, as the wine-infused gravy completely permeates the soft beans and collagen-rich beef shank.

If you want to speed up preparation, you can also use good quality canned white beans; in this case, only add the beans to the stew in the last 15-20 minutes of cooking as the beef softens.
