A fűszeres és melengető filippínó Tinola a hidegebb őszi napok igazi gyógyírja. Az aranyszínű húsleves gazdagon árad a friss, pirított gyömbér és fokhagyma illatától, amit a szaftos csirkecombfilé, a zsenge cukkini és a lágy bébispenót tesz ellenállhatatlanul teljessé. Egy tál tiszta harmónia, ami belülről melenget át.

Preparation
Cut the chicken thigh fillets into bite-sized pieces. Peel the ginger and cut into thin matchsticks, crush the garlic, finely chop the onion, and slice the zucchini into half-moons.
Sautéing and simmering
Heat 1 tablespoon of sunflower oil in a large pot over medium heat. Add the chopped ginger, garlic, and onion, then sauté for 2-3 minutes until wonderfully fragrant.
Add the chicken to the pot and sauté until it turns white, about 4-5 minutes. Pour in 2 tablespoons of fish sauce and toss together so the meat absorbs the flavours.
Chef's tip
Traditionally made with green papaya or chayote, but tender zucchini absorbs the flavour of the ginger broth just as perfectly, and cooks super fast.
If you enjoy spicy flavours, slice a little fresh red chilli pepper over the top when serving for an even warmer autumn vibe.
