A klasszikus francia konyha elegáns remekműve: lassan, vajon karamellizált édeskés salottahagyma, száraz fehérborral és gazdag marha alaplével összefőzve, ropogós, lágyan olvadó kecskesajtos bagettel koronázva.

Preparation and caramelization
Peel the shallots and cut them into thin half-moons.
In a heavy-bottomed pot, melt the butter with the olive oil over medium heat, then add the sliced shallots, a pinch of salt, and the brown sugar.
Sauté and caramelize the shallots over low-medium heat, stirring frequently, for about 25-30 minutes until they are a deep golden brown, caramelized, and silky sweet.
Chef's tip
The secret to the perfect French onion soup is patience: do not rush caramelizing the onions over high heat; slow cooking brings out the natural sweetness of the shallots.
If you want an even richer flavor, you can drizzle the baguettes with a few drops of high-quality wildflower honey after placing the goat cheese on top.
