Kifli Kukták

Hagyományos spanyol tengerparti rizses egytálétel omlós aranydurbincsfilével, illatos valódi sáfránnyal és édes kápia paprikával. A kerek szemű rizs magába szívja a gazdag zöldségalaplé és a füstölt fűszerpaprikás sofrito minden aromáját, míg a durbincsfilé szaftos és puha marad. Igazi melengető mediterrán fogás a spanyol konyha kedvelőinek.

Preparation method

Preparation

1

Rinse the sea bream fillets, then pat them thoroughly dry with paper towels. Cut them into bite-sized pieces, about 3-4 cm, then season lightly with salt and pepper. Finely dice the onion and kapia pepper, crush the garlic, and finely chop the parsley.

2

Heat the vegetable stock in a small saucepan until boiling, add the saffron, and keep warm over low heat so that the golden color and rich aroma are fully extracted.

Cooking and serving

3

Heat the extra virgin olive oil in a wide, flat skillet or paella pan over medium heat. Place the sea bream pieces in skin-side down, sear for 1.5 minutes, then turn them over and cook for another 1 minute until just turning opaque. Transfer to a plate and set aside.

Chef's tip

Gilt-head bream is an exceptionally delicate fish, so it is important to add it on top of the rice only at the very end of cooking, ensuring it does not break apart and stays wonderfully juicy.

If you like the crispy, caramelized crust of rice at the bottom of the paella (socarrat), turn up the heat to high for the last 1 minute until you hear a faint crackling sound.
