Preparation

1

Rinse the pork leg, pat dry, and cut into thin, finger-thick strips. Finely dice the Kolozsvári bacon. Peel and finely chop the yellow onion and garlic. Clean the oyster mushrooms and brown button mushrooms; cut the oyster mushrooms into strips and slice the button mushrooms. Peel the potatoes and dice them into 2-3 cm cubes.

Preparing the stew base

1

In a spacious pot or cast-iron skillet, render the fat from the Kolozsvári bacon together with the lard over medium heat. When the bacon bits are fried to a golden crisp, add the finely chopped yellow onion and cook until translucent, about 4-5 minutes.

2

Add the minced garlic to the onion base, stir well, then increase the heat and add the pork strips. Sear over high heat, stirring constantly, until the meat turns white and begins to lightly brown.

Chef's tip

Tempering the sour cream: Always whisk the sour cream with 2-3 ladles of warm stew sauce in a separate bowl before pouring it into the pot. This prevents the sour cream from curdling and keeps the sauce wonderfully smooth and silky.

Wild mushroom variations: Oyster mushrooms wonderfully mimic the fibrous, meaty texture of wild mushrooms. If you have the chance, feel free to supplement the dish with a few soaked dried porcini mushrooms for an even richer forest aroma.
