Kifli Kukták

A baszk konyha egyik legotthonosabb, melengető őszi klasszikusa a Porrusalda con bacalao. Az édeskés, vajpuha póréhagyma, a sárgarépa és a krémes burgonya gazdag zöldségalaplében fő össze, amelyben a tőkehalfilé kíméletesen, omlós rétegekre párolódik. Igazi lélekmelegítő spanyol halas egytálétel.

Preparation method

Preparing the base

1

Thoroughly wash the leeks between the layers, then slice the white and light green parts into 1-2 cm thick rounds. Peel and slice the carrots, and thinly slice the garlic cloves.

2

Heat the extra virgin olive oil in a heavy-bottomed pot over medium heat. Add the sliced garlic and leeks, season lightly with salt, and sauté for 5-6 minutes, making sure they do not brown, but become pleasantly soft and release a sweet aroma.

Cooking the vegetables and the stew

1

Peel and crack the potatoes the Spanish way: cut slightly into each potato with a knife and snap off chunks so the starch will better thicken the broth.

Chef's tip

Cracking the potatoes is a traditional Basque method: the natural starch released during cracking gives the broth a silky, rich texture without the need for flour.

Do not overcook the cod under any circumstances: as soon as the flesh turns opaque white and flakes easily, remove it from the heat immediately so it remains perfectly juicy.
