Kifli Kukták

Autentikus észak-mexikói discada norteña: serpenyőben aranybarnára pirított szaftos marha hátszín, ropogós bacon, füstölt kolbász és roppanós paprikák világos sörrel összeforralva, meleg kukoricatortillán, friss korianderrel és lime-mal tálalva.

Preparation method

Preparing and frying the ingredients

1

Cut the beef sirloin into small, bite-sized cubes or thin strips. Dice the sliced bacon and smoked sausage, and finely chop the onion, garlic, red bell pepper, and seeded jalapeño pepper. Dice the vine tomatoes into small cubes.

2

Heat 2 tablespoons of sunflower oil in a large, heavy skillet or cast-iron disc over medium-high heat. Add the diced bacon and fry for 3-4 minutes until crispy and its fat has rendered.

3

Add the sliced or diced smoked sausage to the skillet and fry for another 2-3 minutes until nicely browned. Push the bacon and sausage pieces to the edge of the skillet to make room for the beef.

Chef's tip

Traditionally in Northern Mexico, discada is cooked on an agricultural plow disc over an open fire, but at home, a heavy-bottomed cast-iron skillet or wok perfectly recreates those smoky, caramelized flavors.

The light beer not only adds rich flavor, but its acidity also helps deglaze the tasty browned bits from the bottom of the pan, making the meats even juicier and tender.
