Kifli Kukták

Klasszikus magyar tepsis egytálétel szaftos paprikás sertésraguval, vékonyra szeletelt burgonyarétegekkel, gazdag tejföllel és ropogósra sült trappista sajttal a tetején. Kiadós őszi családi fogás, amely a hortobágyi ízvilágot ötvözi a hagyományos tepsis burgonya kényelmével.

Preparation method

Preparation and making the ragout

1

Thoroughly wash the potatoes and parboil them in their skins in lightly salted water for about 15-20 minutes until half-tender. Drain, allow to cool, then peel and slice into half-centimetre rounds.

2

Cut the pork shoulder into very small cubes or strips. Finely chop the onion, mince the garlic, and finely dice the TV pepper and tomato.

3

Heat the lard in a deep pan, add the finely chopped onion, and sauté until translucent. Add the minced garlic, diced pepper, and tomato, fry for a couple of minutes, then remove from the heat and sprinkle with the sweet paprika and ground caraway.

Chef's tip

It is best to choose Type B potatoes (all-purpose/boiling potatoes that do not disintegrate), so the slices remain nicely intact during layering.

If you enjoy spicy flavours, you can add a little sliced hot pointed pepper to the ragout or a pinch of hot paprika alongside the sweet paprika.
