Kifli Kukták

Kívül ellenállhatatlanul aranybarna és ropogós, belül szaftos fűszeres sertéshússal teli balkáni burek. A szódavizes locsolásnak köszönhetően a réteslapok tökéletesen puhák és rétegesek maradnak, hideg görög joghurttal tálalva igazi lélekmelengető őszi fogás.

Preparation method

Preparing the meat filling

1

Finely dice the onion and mince the garlic. Heat 2 tablespoons of sunflower oil in a deep skillet, then sauté the onion until translucent. Add the garlic and stir-fry for half a minute until fragrant.

2

Add the minced pork and cook, breaking it apart with a wooden spoon, until browned. Season with salt, ground black pepper, and sweet paprika. Cook over low heat for about 10-12 minutes until the juices thicken, then remove from the heat and let it cool until lukewarm.

The basting mixture and assembly

1

In a small bowl, thoroughly mix the soda water with the remaining sunflower oil and a pinch of salt. This carbonated emulsion ensures that the phyllo pastry sheets stay soft and irresistibly flaky under the crispy crust.

Chef's tip

According to traditional Balkan custom, burek is enjoyed warm with cold plain yogurt or kefir for breakfast or as a hearty dinner.

When working with phyllo pastry, be sure to keep the unused sheets covered with a damp kitchen towel so they do not dry out and tear while rolling.
