Kifli Kukták

Klasszikus magyar vendéglátóipari remekmű: szaftos, elősütött marharostélyos omlósra párolva gazdag fűszerpaprikás mártásban, zsenge kelkáposztával, roppanós virslivel és selymes tejföllel dúsítva. Házias petrezselymes burgonyával az igazi őszi-téli kényeztetés.

Preparation method

Preparation

1

Lightly tenderize the beef rib eye slices and score the edges in a few places so they do not curl up during cooking. Season both sides with the salt and freshly ground black pepper, then lightly coat in the fine wheat flour.

2

Clean the savoy cabbage of its thick outer leaves, cut into wedges, remove the core, and slice into finger-thick strips. Finely dice the yellow onion, crush the garlic, and slice the frankfurters into rounds.

Browning and braising

1

Heat the lard in a large, deep skillet or pot. Place the floured beef slices in and sear over high heat on both sides until nicely browned (about 2-3 minutes per side), then remove them to a plate.

Chef's tip

The beef will turn out butter-soft if you braise it slowly at a gentle simmer under a tight-fitting lid. If too much braising liquid evaporates, replenish it with a little stock or warm water.

It is best to add the savoy cabbage toward the end of cooking so it retains its vibrant green color and pleasant texture without cooking down too much.
