A mexikói Sonora állam híres óriás burritója, a burro percheron: serpenyőben pirított omlós marhahátszín és ropogós bacon, lágyra olvadt cheddar sajt, friss házi avokádó-paradicsom salsa és hűs tejföl nagyméretű búzatorillába tekerve, majd mindkét oldalán ropogósra pirítva. Autentikus, tartalmas mexikói street food élmény az őszi estékre!

Preparation method

Preparing the beef and bacon

1

Cut the beef sirloin into thin, bite-sized strips or small cubes, then season with the fine salt and ground black pepper. Cut the sliced bacon into smaller pieces.

2

Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the chopped bacon and fry until nicely golden brown and crispy. Remove from the skillet, leaving the rendered fat in the pan.

3

Add the seasoned beef to the hot skillet with the bacon fat, and sear quickly over high heat for 3-4 minutes until juicy and browned. Stir in the crispy bacon, then remove from the heat.

Chef's tip

The secret to a perfectly crispy and evenly warmed burrito is to press it down gently with a spatula or a weight in the skillet while toasting.

If you prefer spicier flavors, you can also add finely chopped pickled or fresh jalapeño peppers to the beef or salsa.
