A japán Miyazaki tartomány legendás utcai étele: omlós csirkecombfilé falatok ropogós bundában, édeskés-pikáns ecetes-szójás nanban mázba forgatva, házi tojásos tatármártással.

Preparation and tartar sauce

Hard-boil 1 egg (approx. 9-10 minutes), then cool it in cold water, peel, and finely dice.

In a small bowl, mix the finely diced boiled egg, finely chopped gherkins, 1 thinly sliced spring onion, and 60 g mayonnaise. Season lightly with salt and pepper to taste, then refrigerate until serving.

Cut the chicken thigh fillets into bite-sized pieces (approx. 3-4 cm). In a bowl, season with the finely grated ginger, crushed garlic, 1 tsp salt, and 1 pinch of ground black pepper.

Chef's tip

Chicken thigh fillets stay juicier and more tender than chicken breasts when fried at high temperatures.

The tartar sauce and nanban glaze can be prepared ahead of time, making this a quick and convenient dish to serve to guests.
