Soak the glass noodles in lukewarm water for 10 minutes, then drain and cut them slightly shorter with kitchen scissors.
In a small bowl, mix the sauce: soy sauce, oyster sauce, sesame oil, cane sugar, coarsely ground black pepper, and 100 ml of lukewarm water. Toss the drained glass noodles with half of the sauce.
Crush the garlic cloves with the flat of a knife blade, cut the fresh ginger into thin slices, and cut the spring onions into 4-5 cm pieces.
Chef's tip
The shrimp will stay juicy and tender if not overcooked: as soon as they are opaque and pink, remove them immediately from the heat.
If you want an even more intense Asian flavor, you can add a few whole Sichuan peppercorns or fresh coriander roots to the base along with the black pepper.
