Preparing the stew base
Finely chop the yellow onion and garlic, and cut the TV peppers and tomatoes into small cubes.
Heat the sunflower oil in a deep pot, add the chopped yellow onion, and sauté over medium heat until translucent.
Add the diced peppers and tomatoes, then the garlic. Sauté together for a few minutes until the vegetables release their juices and form a thick base.
Chef's tip
Do not overcook the squash: it is best when the shreds still retain a pleasant, slightly crisp texture.
If you prefer it even creamier, you can stir a tablespoon of sour cream directly into the stew gravy at the end.
