Wash the potatoes thoroughly, then cook them in their jackets in lightly salted water until tender, about 25-30 minutes. Once cooked, let them cool, peel them, and cut into 0.5 cm thick slices.
Melt 1 tablespoon of lard in a pan, add the finely chopped onion, and sauté until translucent. Add the squeezed and slightly chopped sauerkraut, season with sweet paprika and ground caraway, then sauté for 10 minutes. Thinly slice the lightly smoked sausage.
Assembly and baking
Preheat the oven to 190 °C. Grease a medium-sized baking tray or ovenproof dish with the remaining lard. Arrange a layer of sliced potatoes at the bottom, and season lightly with salt and pepper.
Chef's tip
If the sauerkraut is too salty or very sour, it is worth rinsing it once in cold water and squeezing it out thoroughly before sautéing.
For an even richer flavor, you can sprinkle a few diced smoked bacon pieces or a little grated Trappist cheese on top during the last 10 minutes of baking.
