Thoroughly wash the turkey legs, then pat them dry with paper towels. In a small bowl, mix together the brown sugar, smoked paprika, granulated garlic, salt, and freshly ground black pepper.
Lightly coat the legs with olive oil, then rub evenly with the spice mixture on all sides. Let stand at room temperature for 20-30 minutes to allow the spices to penetrate the meat.
Preparing the BBQ glaze
In a small saucepan or bowl, combine the BBQ sauce, honey, apple cider vinegar, and Dijon mustard. Heat over low heat for 3-4 minutes until the honey completely melts and you get a silky, glossy glaze.
Chef's tip
If you want an extra smoky flavor, toss soaked applewood or hickory chips onto the coals or into the smoker box of the grill.
Apply the glaze only at the very end of cooking, as the honey and brown sugar can burn easily at high temperatures.
