Roughly mash the cooked carrots and parsley root leftover from the broth in a large bowl using a fork or potato masher. It is fine if smaller pieces remain, as this gives it a really good texture.
Finely chop the onion and garlic, and chop the fresh parsley. Grate the Trappist cheese.
Combining the mixture
Add the finely chopped onion, crushed garlic, chopped parsley, and grated Trappist cheese to the mashed vegetables.
Chef's tip
If you want even more exciting flavors, you can also mix a little crushed garlic or fresh chives into the sour cream dip.
The patties can also be baked in the oven: place them on a baking sheet lined with baking paper, lightly spray with sunflower oil, and bake in a preheated oven at 200 °C for 20-25 minutes until crispy.
