Cooking the meat
Rinse the beef brisket thoroughly in cold water, then place it in a deep pot and cover generously with cold water.
Bring to a boil over medium heat, then carefully skim off the foam that forms on top using a slotted spoon so the broth remains clear and golden.
Add the cleaned carrots, parsley root, celeriac, whole onion, garlic cloves, whole black peppercorns, bay leaves, and salt.
Chef's tip
Do not discard the cooking broth! It makes a perfect, flavorful beef broth base to enjoy with soup noodles or to use as stock for other dishes.
If the sour cherries are tart, you can increase the amount of sugar to taste; a pinch of salt will also enhance the fruity character of the sauce.
