Preparation method
Rinse the lentils in cold water and drain them. Cut the smoked pork collar and peeled potatoes into approx. 1.5–2 cm cubes. Slice the carrots into rounds, and finely chop the onion and garlic.
Melt the lard in a large pot, add the onion, and sauté over medium heat until translucent. Add the diced smoked pork collar and fry for 3-4 minutes until nicely browned.
Remove the pot from the heat, stir in the sweet paprika and finely chopped garlic. Pour in approx. 800 ml of water or vegetable stock, then return to the heat.
Chef's tip
Smoked pork collar is naturally salty, so always add salt only at the end of cooking after tasting.
If you prefer an even creamier, thicker sauce, ladle out a portion of lentils and vegetables at the end of cooking, purée with an immersion blender, and stir it back into the ragout.
