Heat 2 tablespoons of sunflower oil in a heavy-bottomed pot and sear the beef slices on both sides over high heat for 2-3 minutes, then remove them onto a plate.

The secret to vadas sauce lies in slowly roasting the root vegetables and lightly caramelizing the sugar, giving it its characteristic deep, sweet, and tangy flavor profile.
If the bread dumpling mixture is too soft, add 1-2 more tablespoons of flour or breadcrumbs; if it is too dense, loosen it with a little milk.
