INGREDIENTS

  • 80 dkg chicken liver
  • 10 dkg sliced bacon
  • Pea shoots
  • 1 pc cucumber
  • 1 lime
  • A little sushi ginger
  • Salt
  • Pepper
  • 1 red onion
  • 3 stalks spring onion
  • 5 dl milk
  • 2 cloves garlic
  • Honey

INSTRUCTIONS

    Clean the livers from sinews and membranes, then soak them in milk for 1 hour, into which 2 cloves of grated garlic and 2 dkg of salt have been added beforehand.

    Peel and grate the cucumber, salt it, squeeze lime juice over it, add one tablespoon of sushi ginger, half a thinly sliced red onion, and a little honey, then refrigerate until serving. Only sprinkle with spring onion when serving.

    Wrap the marinated livers in bacon and sear them all around in a hot pan, then place them in an oven preheated to 180 degrees Celsius for 5-8 minutes.

    Serve the cooked roulades with sweet chili sauce and the marinated cucumber.
