INGREDIENTS
- 80 dkg chicken liver
- 10 dkg sliced bacon
- Pea shoots
- 1 pc cucumber
- 1 lime
- A little sushi ginger
- Salt
- Pepper
- 1 red onion
- 3 stalks spring onion
- 5 dl milk
- 2 cloves garlic
- Honey
INSTRUCTIONS
- 1Clean the livers from sinews and membranes, then soak them in milk for 1 hour, into which 2 cloves of grated garlic and 2 dkg of salt have been added beforehand.
- 2Peel and grate the cucumber, salt it, squeeze lime juice over it, add one tablespoon of sushi ginger, half a thinly sliced red onion, and a little honey, then refrigerate until serving. Only sprinkle with spring onion when serving.
- 3Wrap the marinated livers in bacon and sear them all around in a hot pan, then place them in an oven preheated to 180 degrees Celsius for 5-8 minutes.
- 4Serve the cooked roulades with sweet chili sauce and the marinated cucumber.
