Padrón peppers

Padrón peppers originate from the municipality of Padrón in the province of Coruña, in northwestern Spain. They are small, about 5 cm long, and have an elongated shape. They are often harvested unripe, while still green. Their taste is mild, but some specimens can be very spicy.

Uses

Padrón peppers are usually fried in olive oil until the skin starts to blister and the peppers collapse. In and around the town of Padrón, the stems are removed before frying so they do not taste bitter. Elsewhere, the stems are usually left on the peppers and used to hold them while eating. Fried Padrón peppers are typically served hot, sprinkled with coarse salt, sometimes with pieces of bread, as tapas.

STEP 1
Heat the olive oil in a large pan over high heat.
Fry the peppers, stirring frequently, for 5 minutes until blistered and wilted.
The peppers should be soft and slightly charred.

STEP 2
Transfer the peppers to a plate and season with a little sea salt. Serve with a dip or as part of a tapas spread.

Storage

Store in a dry, cool place between 5-10 °C. Protect from direct sunlight.

These are used to make pastes, chutneys, or exotic spirits.
