  • 1 kg wild boar stew meat
  • Wild game meat
  • 1 pc onion
  • Juniper berries
  • 14 g garlic
  • Bay leaf
  • 1 pc bell pepper
  • 1 pc tomato
  • 2000 ml broth
  • 15 g paprika powder
  • Ground caraway
  • Salt
  • Pepper
  • 200 g carrot
  • 200 g potato
  • Fresh parsley
  • 20 g Mangalica fat
  • Sourdough bread

    Sauté the finely chopped onion and garlic in the fat.

    Meanwhile, chop the green pepper and add it as well.

    Once they have softened slightly, add the meat cubes to the stew base and brown them briefly over high heat.

    While the meat is tenderizing, peel and dice the carrots and potatoes.

    After an hour, season the meat with a little caraway, paprika powder, freshly ground pepper, and any other spices you like.

    When it's almost tender, add the vegetables and pour in 2 liters of broth or water.

    Taste and adjust salt to your liking. Once ready, serve with fresh sourdough bread and freshly chopped parsley.

    Can also be made with other wild game. Instead of fat, you can use other types of fat, or even fry smoked bacon underneath. If you like, you can also use juniper berries, bay leaves, or other spices.
