INGREDIENTS

  • 4 nice slices of steak, at least 25 dkg each
  • 1 kg thin-skinned frying potatoes
  • 30 dkg red onion
  • 1 tablespoon flour
  • 1 liter oil
  • 10 dkg butter
  • 1 sprig thyme
  • 2 cloves garlic
  • Salt
  • Sugar
  • White wine vinegar
  • Pepper
  • 2 liters beef stock, reduced to 2 dl
  • 1 carrot
  • 1 red onion
  • 20 dkg cabbage
  • 20 dkg any other vegetable, kohlrabi, celery, or zucchini are also good for homemade mixed pickles
  • 1 small icicle radish

PREPARATION

    For the mixed pickles, slice the vegetables into strips, then sprinkle with a level tablespoon of salt, mix, and let stand.

    Mix two tablespoons of sugar with one tablespoon of vinegar and pour over the vegetables.

    Let stand for a few hours. However, this can be prepared a few days in advance and stored in the refrigerator.

    Cut the potatoes into wedges and boil in salted water for 10 minutes, then drain the water and let the potatoes cool.

    Slice the onion thinly and toss with a little flour.

    Let the meat sit at room temperature for a good hour before frying.

    In a heavy pan, fry both sides of the meat until nicely browned in a little oil for a few minutes, being careful not to overcook. Then add a knob of butter, a sprig of thyme, and crushed garlic to the pan, baste the meat with the foaming butter, and let it rest in a warm place until serving.

    Fry the potatoes in hot oil until crispy, then fry the onions in the same oil until golden.

    Season the meat thoroughly with salt and pepper and serve with fried potatoes, crispy onions, pickles, and gravy.
Tip
It can also be prepared with other meats, such as sirloin, or even poultry or pork. The vegetables in the mixed pickles can be varied according to your preference.
