Preparation method
Preparing the flavored broth
Place the broth ingredients (broth, part of the finely chopped ginger, garlic, spring onion, coriander, and chili) into a pot and bring to a boil. Skim off any foam that forms, then simmer uncovered over low heat for 15 minutes. After that, remove from heat and let stand for 20 minutes.
Remove the meat from the pot and cut it into 1 cm thick slices. Strain the prepared broth through a fine sieve into a clean pot.
Finishing and serving
Slice the remaining ginger thinly, finely chop the coriander (with stems) and spring onion. Slice the chili pepper into rings.
Chef's tip
You can freeze the remaining flavored broth for later use. If you are making more soup, proportionally increase the amount of lime juice, sugar, and fish sauce for balance.
For an even more authentic taste, add 2 stalks of halved lemongrass and 8 kaffir lime leaves to the broth.
Instead of brown sugar, you can use palm sugar for a more distinctive flavor. Mushroom lovers can also cook quartered button mushrooms or oyster mushrooms in the soup during the last 3 minutes.
