Bretagne rusztikus hangulatát idéző aromás őszi leves vajon pirított barna csiperkegombával, mogyorós aromájú pirított hajdinával és illatos kakukkfűvel. A fehérbor eleganciája és a lassú gyöngyöztetés mély, melengető ízeket varázsol az asztalra a hűvös napokon.
Preparation method
Preparation
Thoroughly rinse the buckwheat groats in a fine sieve under cold running water, then let them drain well.
Clean the cremini mushrooms with a paper towel or a soft brush, then cut into even wedges or thicker slices. Finely chop the shallots and garlic cloves.
Cooking
In a dry, heavy-bottomed pot, toast the buckwheat groats over medium heat for 2-3 minutes until they start to release a pleasantly nutty aroma, then remove and set aside in a bowl.
Chef's tip
Dry toasting the buckwheat is the secret of Breton cuisine: not only does it intensify the grain's natural nutty aroma, but it also prevents the grains from becoming mushy in the soup.
For an even richer autumn experience, drizzle a few drops of extra virgin olive oil and freshly ground black pepper over the hot mushroom soup right before serving.
