Autentikus francia hagymaleves aranyszínűre karamellizált vöröshagymával, száraz fehérborral és gazdag marhahús alaplével, tetején sütőben aranybarnára grillezett sajtos kovászos bagettel.
Preparation method
Caramelizing the onions and cooking the soup
Peel the onions, cut them in half, and slice them into thin half-moons.
Heat a large, heavy-bottomed pot and add the butter. Melt it until it begins to foam slightly.
Add all the sliced onions to the pot at once. Cook and caramelize over medium heat, stirring occasionally, for about 20-30 minutes until they collapse and take on a nice golden brown color.
Chef's tip
Caramelization is a game of patience: never rush the onions over high heat. The natural sugars released during slow, gentle cooking give French onion soup its uniquely deep color and complex aroma.
For traditional gratinating, ladle the soup directly into oven-safe ceramic bowls, place 1-2 slices of toasted baguette on top, sprinkle thickly with cheese, and place the whole bowl under the oven grill until the cheese is bubbly and crispy.
