Kifli Kukták

A Gaeng Som (sárga-savanyú thai curry) Thaiföld déli részének ikonikus, frissítő és melengető halétele. Kókusztej nélkül, tamarinddal savanyított, kurkumás és fokhagymás illatos alaplében főtt omlós tőkehalfilével, roppanós zöldbabbal és édeskés káposztával készül. Könnyed, mégis mély ízvilágú őszi fogás jázmin rizzsel tálalva.

Preparation

1

Rinse the jasmine rice thoroughly in cold water, then steam covered in twice the amount of lightly salted water until tender, about 12-15 minutes.

2

Check the cod fillets, debone if necessary, and cut into bite-sized pieces of about 4-5 cm. Prepare the vegetables: cut the cabbage into larger pieces, slice the carrots into rounds, and trim the ends of the green beans.

3

In a mortar or food processor, pound or blend the shallots, garlic, chopped red chili, and ground turmeric with a pinch of salt until an aromatic spice paste forms.

Chef's tip

Gaeng Som is traditionally made without coconut milk, resulting in a particularly light curry with clean flavours. If you would like to soften the vibrant sourness, you can slightly increase the amount of cane sugar to taste.

Do not overcook the fish under any circumstances: as soon as the cod turns from translucent to opaque white and flakes with a fork, remove from the heat immediately.
