Kifli Kukták

A póréhagyma az őszi piacok egyik legfinomabb, mégis gyakran méltatlanul háttérbe szoruló kincse. Ebben a melengető főételben a vajpuha, zöldségalaplében előpárolt póréhagymaszárakat selymes fokhagymás-szerecsendiós tejfölös mártás öleli körbe, a tetején pedig aranybarnára, ropogósra pirul a gazdag trappista sajtos zsemlemorzsakéreg. Egyszerű, házias, mégis igazi kényeztető fogás a hűvös őszi estéken.

Preparation method

Preparation and steaming the leeks

1

Preheat the oven to 200 °C (conventional heat). Thoroughly wash the leeks, including between the layers, remove any damaged outer leaves and the root ends, then cut into pieces about 8-10 centimetres long.

2

In a wide saucepan, bring the vegetable stock to a boil with a pinch of salt. Add the leek pieces, cover, and simmer gently for 8-10 minutes until slightly tender but still holding their shape. Remove them with a slotted spoon and drain well, setting aside the remaining vegetable stock.

Silky sauce and assembly

1

In a small saucepan, melt 20 g of butter, add the fine wheat flour, and cook for 1 minute until lightly golden. Gradually pour in the reserved warm vegetable stock, whisking continuously until smooth and thick.

Chef's tip

It is best enjoyed dipped with fresh, crusty homemade sourdough bread, but it also makes an excellent side dish alongside steamed jasmine rice or buttery mashed potatoes.

If you prefer a more tangy, smoky flavour, you can replace part of the Trappist cheese with smoked cheese or aged mountain cheese.
