A Canh Chua Cá Dél-Vietnám ikonikus halétele: zamatos tőkehalfilé kíméletesen buggyantva tamarindos, enyhén édeskés és savanykás levesben, ananásszal, érett paradicsommal és roppanós mungóbabcsírával. Illatos jázmin rizzsel tálalva tökéletes, melengető és könnyű fogás.

Preparation method

Preparation and cooking the rice

0

Rinse the jasmine rice thoroughly in cold water until the water runs clear, then simmer covered in double the amount of lightly salted water over low heat for 12-14 minutes until tender, then let it rest covered.

1

Cut the cod fillets into larger bite-sized pieces (approx. 4-5 cm). Peel and cut the pineapple into small wedges, cut the tomatoes into wedges, and rinse and drain the mung bean sprouts.

2

Finely chop the garlic, slice the spring onions and red chili into rounds, and roughly chop the coriander.

Chef's tip

Do not overcook the cod: as soon as the flesh becomes opaque and flaky, remove it from the heat immediately so it stays juicy and butter-soft.

If the tamarind paste is very thick, mix it with a little warm water beforehand before pouring it into the soup.
