Kifli Kukták

A pozsonyi marhatokány a tradicionális magyar gasztronómia egyik legnemesebb szaftos remeke. Az omlósra párolt marhalapocka csíkokat édeskés zsenge zöldborsó, vékonyra szelt roppanós csemegeuborka és selymes tejföl teszi ellenállhatatlanná. Klasszikus, melengető őszi főétel családi ebédekre és ráérős vacsorákra.

Preparation method

Preparation

1

Cut the beef shoulder according to traditional tokány style into thin strips, about 4–5 cm long. Finely dice the smoked bacon, finely chop the onion, and crush the garlic. Cut the pickled gherkins into thin matchsticks, and measure out the green peas.

Searing and braising the meat

1

Melt the lard in a heavy-bottomed cast-iron pot and render the diced smoked bacon over low heat. Once the fat has rendered and the bacon cubes are lightly golden brown, add the finely chopped onion and sauté over medium heat until golden.

2

Increase the heat, add the beef shoulder strips, and sear quickly while stirring constantly until a nice browned crust forms on all sides of the meat.

Chef's tip

The true hallmark of a tokány is cutting the beef into thin strips—unlike a pörkölt, here pencil-thin strips ensure that the sauce coats the meat evenly and it cooks to melt-in-your-mouth tenderness more quickly.

Always add the pickled gherkins to the ragout at the very end together with the green peas, so they don't overcook, staying crisp, while their pleasant acidity balances the rich sour cream sauce.
