Kifli Kukták

Őszi zöldséges fogás a magyaros ízek kedvelőinek: blansírozott, zsenge kelkáposztalevelekbe tekert, pirított sütőtökkel, zamatos barna csiperkegombával és fűszeres árpagyönggyel (gerslivel) gazdagított tekercsek, gazdag fűszerpaprikás mártásban sütve, krémes tejföllel és friss petrezselyemzölddel tálalva.

Preparation method

Preparation and vegetable base

1

Rinse the pearl barley thoroughly in a sieve, then cook in twice the volume of lightly salted water or stock for about 25-30 minutes until half-tender, then drain.

2

Bring water to a boil with a little salt in a large pot. Carefully peel off 8 intact outer leaves from the Savoy cabbage, then blanch them in boiling water for 2-3 minutes until pliable. Transfer to ice water, drain, and carefully shave down the thick leaf veins.

3

Finely chop the onion, peel the pumpkin and cut it into small, half-centimetre cubes, and finely chop the cleaned brown button mushrooms as well.

Chef's tip

It is best to shave the thick central vein of the Savoy cabbage leaves flat with a sharp knife after blanching, making the leaves much easier to roll without tearing.

If you want even richer flavours, you can roast the pumpkin cubes in the oven beforehand, or add a pinch of smoked paprika to the filling.
