Preheat the oven to 200 °C and line a baking sheet with parchment paper.
Wash and peel the vegetables. Cut the beetroot, carrots, and parsley root into uniform, bite-sized sticks or cubes of about 2-3 cm so they roast evenly.
Peel the red onion and cut it into wedges, and leave the garlic cloves whole or lightly crush them with the flat side of a knife.
Chef's tip
When chopping the vegetables, keep in mind that beetroot softens slower than carrots, so it is worth cutting the beetroot into slightly smaller pieces for perfectly even cooking.
If you desire an even creamier dish, you can serve it with a spoonful of cold herb sour cream, which creates a wonderful harmony with the salty sheep's milk cheese and honey-roasted vegetables.
