INGREDIENTS
- 500 g very ripe tomatoes
- 400 g canned concentrated tomatoes
- 30 g peeled white onion
- 1 cucumber
- 1 red bell pepper
- 1 green bell pepper
- 2 slices toast bread
- 2 cloves peeled garlic
- 3 tablespoons red wine vinegar
- 8 tablespoons olive oil
- A pinch of ground cumin
- A pinch of cayenne pepper
- Salt
- 1/2 teaspoon sugar
PREPARATION
- 1Chop the onion. Core and dice the tomatoes.
- 2Cut the cucumber lengthwise, scrape out the seeds and discard them. Cut the cucumber into smaller pieces and place in a bowl. Also remove the seeds from the bell pepper, slice the flesh into smaller pieces, and add it to the cucumber in the bowl.
- 3Cut off the crusts of the toast bread and tear it into the bowl with the vegetables. Pour over the red wine vinegar, add the remaining ingredients, mix well, and let it rest in the refrigerator for an hour.
- 4Place the contents of the bowl into a blender, blend, and strain into a clean container. Season with salt to taste and refrigerate.
- 5Serve the soup cold, in chilled bowls, drizzled with oil.
