The skin-on thighs are first shaped into a heart shape. Then they are rubbed with a mixture of dry sea salt and brine. They are turned weekly and then smoked golden brown with hardwood sawdust in our stone smokehouse. This great product is the pride of our small business. Enjoy it in good health!
