Preparation:

  • Mix the water and citric acid in a saucepan.
  • Peel the quince, quarter it and remove the core.
  • Cut the fruit into 2 x 2 cm cubes and place them immediately in the citric acid water, so that they do not brown during cooking.
  • Add the sugar, the split and scraped vanilla bean and salt.
  • Cook the quince over a very low heat for 1 hour until soft.
  • Pour into hot, sterilized jars, seal tightly and leave to stand in a dry place.
