Preparation method
First, prepare the dressing. Squeeze the lemon juice, season with salt and pepper, add the olive oil, then shake it together in a bottle. It will keep for days in the refrigerator.
If using green beans, blanch them in hot water and refresh them in ice water.
Boil the egg for 6 minutes, then cool it in cold water, peel it, and cut it into wedges, season with salt and pepper.
Chef's tip
Can be prepared with any other vegetables. Instead of lemon, you can also use white wine vinegar. Capers also go well with the salad.
