A Carne en su jugo Guadalajara legendás utcai fogása: vékonyra csíkozott marhahús ropogós szalonnazsírban pirítva, gazdag fűszeres marhahús alaplében összefőzve fekete babbal, pirított újhagymával és friss korianderrel. Meleg kukoricatortillával és lime-mal tálalva igazi autentikus street food élmény.

Preparation method

Preparation and searing

0

Cut the bacon into small strips, and slice the beef sirloin into thin, bite-sized strips. Finely chop the onion, crush the garlic cloves, and slice the jalapeño peppers into rounds.

1

In a deep frying pan or cast-iron pot, fry the bacon until golden and crispy. Remove the crispy bacon pieces and set them aside for serving. Leave the rendered fat in the pan.

2

In the hot bacon fat, sear the whole spring onions for 3-4 minutes until lightly charred all over, then remove them to a plate.

Chef's tip

Traditional serving tip: In Mexico, carne en su jugo is often served with thinly sliced fresh radishes as well, which add a crunchy texture and freshness to the hot, juicy stew.

Tortilla tip: Before warming, lightly moisten the corn tortillas with damp hands so they do not dry out in the hot pan and will not crack when folded.
