A Boureki a krétai gasztronómia egyik legnépszerűbb tepsis fogása: hajszálvékonyra szelt padlizsán és burgonya selymes rétegei frissítő mentával, sós görög fetával és ropogósra sült aranybarna szezámmagos kéreggel.

Preparation

1

Preheat the oven to 180 °C (conventional top and bottom heat), and lightly grease a medium-sized baking dish or ovenproof baking pan with extra virgin olive oil.

2

Wash the eggplant and potatoes, then slice both into uniform rounds, approx. 3-4 mm thin (it is recommended to use a mandoline for an even thickness). Mix the minced garlic with 2 tablespoons of extra virgin olive oil.

3

In a bowl, crumble the feta cheese, mix in the Greek yoghurt and finely chopped fresh mint, then season with pepper to taste. In a small bowl, combine the flour with the fine salt and the remaining ground black pepper.

Chef's tip

Cretan boureki is traditionally best served lukewarm: let it cool slightly after removing from the oven, allowing the flavours to meld together and making it easier to cut into neat, clean squares.

If you crave extra richness, you can also mix a little soft goat cheese or ricotta into the feta for an even creamier result.
