Preparation and marinating

1

Soak the clay pot (or clay baker) along with its lid in cold water for at least 30-45 minutes before baking so that its pores fill with moisture.

2

Rinse the pork ribs, pat them dry, and cut them along the bones into 1-2 rib portions. Thoroughly rub all sides with the salt, ground black pepper, ground caraway, sweet paprika, and crushed marjoram.

3

Peel the potatoes and cut them into large wedges. Peel the onions and slice them into rings. Peel the garlic cloves and crush them with the flat side of a knife. Dice the Kolozsvári bacon or cut it into thick strips, and slice the Hungarian wax peppers and tomatoes.

Chef's tip

Always place the clay pot into a cold oven, never a preheated one, and when removing it, always place it on a wooden board or a thick kitchen towel; otherwise, thermal shock can cause the ceramic to crack.

If you do not have a clay pot, a heavy cast-iron Dutch oven or a deep roasting pan also works perfectly: in that case, cover tightly with a double layer of aluminum foil for the first 90 minutes of baking.
