Kifli Kukták

Gazdag, szaftos magyaros egytálétel omlós sertéshússal, füstös Kolozsvári szalonnával, rengeteg fokhagymával és a raguval együtt puhára főtt burgonyával. Egyetlen lábasban főtt, igazi laktató klasszikus, amit roppanós csemegeuborkával a legfinomabb élvezni.

Preparation method

1

Cut the pork shoulder into finger-thick strips, the Kolozsvár bacon into thin strips, and finely chop the onions. Crush the garlic cloves, dice the Hungarian wax pepper and tomato into small cubes, peel the potatoes, and cut them into bite-sized cubes.

2

Melt the pork lard in a large pot and render the sliced bacon until it becomes nicely golden brown and crispy.

3

Sauté the finely chopped onions in the rendered bacon fat, then add the pork. Sear over high heat for a few minutes until it whitens, allowing the meat to release its juices and brown nicely.

Chef's tip

The essence of a tokány is the meat cut into strips and the relatively small amount of extremely thick, garlicky gravy. Do not add too much water; allow the bacon and vegetables to give the dish its natural thickness.

If you like spicy food, you can also slice a little hot pointed pepper into the stew alongside the Hungarian wax pepper.
