A japán menchi katsu a street food büfék és bento dobozok egyik legkedveltebb sztárja: szaftos, fűszeres darált csirkehúsból formázott fasírt, amit ropogós panko morzsába forgatva sütünk aranyszínűre. Friss, finomra metélt fejes káposztával és édeskés-pikáns házi tonkatsu szósszal tálalva ellenállhatatlan gasztronómiai élmény.

Preparation method

Preparation and making the meat mixture

1

Finely dice the onion, then sauté in a pan with 1 teaspoon of sunflower oil for 3-4 minutes until soft and translucent. Allow to cool completely.

2

Finely mince the chicken thigh fillets using a meat grinder or a sharp knife (to a minced meat consistency). Place into a large mixing bowl.

3

Add the cooled sautéed onion, finely chopped spring onions, grated ginger, and crushed garlic to the minced chicken. Season with soy sauce, sesame oil, salt, and freshly ground black pepper, then crack in 1 egg and add 30 g of panko breadcrumbs to retain juiciness.

Chef's tip

For the most delicious results, use juicy chicken thigh fillets instead of breast, as the natural fat content of thigh meat ensures the patties stay moist and tender beneath the crispy crust.

Finely shredded white cabbage is an indispensable accompaniment to Japanese street food, providing freshness and a perfect textural contrast to the crispy fried cutlet.
