Kifli Kukták

Hagyományos magyaros ízvilágú, kiadós és melengető őszi egytálétel. A füstölt Kolozsvári szalonnán és sertészsíron pirított szaftos sertéslapocka a zsenge kelbimbóval és kockázott burgonyával összefőzve gazdag, testes szaftot kap, amelyet az édes fűszerpaprika, a kömény és a morzsolt majoranna tesz igazán kerek egésszé. Tálaláskor friss tejföllel és finomra vágott petrezselyemzölddel koronázzuk.

Rinse the pork shoulder thoroughly, pat it dry, and cut it into bite-sized cubes of about 2-3 cm. Finely dice the Kolozsvári bacon.

Peel and finely chop the yellow onion, and mince the garlic cloves. Peel the potatoes and cut them into cubes similar in size to the meat. Clean the Brussels sprouts and cut them in half if they are larger.

Cooking

In a heavy-bottomed pot or Dutch oven, render and fry the diced bacon in pork lard over medium heat until nicely golden brown.

Chef's tip

If you enjoy bolder, spicier flavours, you can add a pinch of hot paprika or a few slices of fresh hot green pepper along with the paprika.

Brussels sprouts are at their best in this one-pot dish when not overcooked: 20-25 minutes of simmering is just enough to make them pleasantly tender while retaining their vibrant green colour.
