Kifli Kukták

A klasszikus magyar vadgasztronómia csúcsa: vörösborral és borókával párolt, omlós szarvascomb selymesre pürésített, karamellizált gyökérzöldség-mártásban, friss tejföllel és mustárral gazdagítva, vajon pirított házi zsemlegombóccal tálalva.

Preparation method

Preparation and braising the venison haunch

1

Clean the venison haunch of tendons and membranes, pat dry, then cut into 4 equally thick slices. Season with salt, and using a sharp knife to cut small pockets, lard the meat with the strips of smoked bacon.

2

Peel the carrots, parsley root, and celeriac, then slice and dice them. Finely chop the onion and garlic.

3

In a heavy-bottomed cast iron pot or pan, render the bacon fat, then sear the larded venison slices over high heat for 2-3 minutes on each side until nicely browned. Transfer them to a plate.

Chef's tip

Venison is a lean and exceptionally fine game meat, so larding it with bacon helps preserve its juiciness during slow braising.

For hunter's style dishes, the delicate caramelization of granulated sugar and the tangy balance of mustard and lemon create the unique, authentic Hungarian flavor profile.
