Kifli Kukták

Ropogósra pirított aranyszínű tofukockák és friss zöldségek — shiitake gomba, kaliforniai paprika, sárgarépa — forró wokban összeforgatva, édeskés-sós koreai Bulgogi mázban karamellizálva, illatos szezámolajjal és szezámmaggal. Villámgyors, 20 perces ázsiai vacsora.

Preparation method

Preparation

1

Drain the tofu, thoroughly squeeze out excess moisture with paper towels, then cut it into 2-2.5 cm bite-sized cubes.

2

Clean the vegetables: slice the shiitake mushrooms, and cut the red bell pepper and carrot into thin strips (julienne). Slice the spring onions diagonally, separating the white and green parts. Finely grate the garlic and fresh ginger.

3

Prepare the authentic Bulgogi marinade sauce: in a small bowl, mix together the soy sauce, brown sugar, grated garlic, grated ginger, cornstarch, and 50 ml of cold water until the sugar and starch are completely dissolved.

Chef's tip

The secret to crispy tofu is pressing out the water: if you have time, place a weight (e.g. a cutting board and a canned good) on top of the paper-towel-wrapped tofu block for 10 minutes; this way it will get a beautiful crust in the hot wok without releasing water.

The essence of wok dishes is speed: prepare and measure all ingredients and the sauce next to the wok before starting to cook (mise en place), because the stir-frying takes only 6-8 minutes!
